Ingredients
Scrub the potatoes and cut into cubes (about 20mm). Parboil for about 5 minutes. Drain and leave to cool.
Cut the bacon into 50/60mm strips and lay on a baking tray.
Cook in the oven turning once at 225°C until crispy (about 15 minutes).
Remove the bacon and keep aside.
Add the potato cubes to the tray and brush some of the bacon fat over them.
Cook in the oven turning once at 225°C until brown
Slice the onion thinly and chop the garlic finely. Heat the olive oil in a wok and fry the onion and garlic until golden.
When the potatoes are cooked, return the bacon to the tray.
Sprinkle over the onions and garlic. Return to the oven for about 5 minutes at 150°C.
Serve hot.

- 8 slices streaky bacon
- 1 onion (about 200gm)

- 1 tablespoon olive oil
