- 10 Baby Yukon Gold potatoes (quartered)
- 2 strips of streaky bacon (thick cut)
- 1 pint whole white mushrooms
- 1/2 cup parsley (chopped)
- 1/2 cup Italian dressing
- 1/2 can of corn
- 1 tbsp EVOO
- 2 tsp of lemon juice

- Preheat oven to 400 F (200 C)
- Place sheet of aluminum foil on baking tray.
- Put Italian dressing, EVOO and Lemon juice on tray
- Arrange potato quarters and bacon on tray
- Cook in oven for 15 minutes
- Remove from oven and turn potatoes
- Add mushrooms bottom side up. Drizzle a little dressing inside mushrooms.
- Spread corn throughout tray.
- Top tray with parsley. Return to oven for 20 minutes.
