I made my DH an open faced egg sandwich with a side of bacon on the skinny half of a brioche bun for breakfast with a strip of streaky crisp bacon on the side. I had just baked a tray of bacon, so I lightly dipped the inner side of the brioche into the bacon grease and then put it face down in the hot skillet until it was seared, then put it on a plate. I took 2 eggs and some heavy cream, added salt, scrambled, and poured into the skillet, then added 1/2 slice of gouda and 1/2 slice of American. I basically turned it into an omelet purse the size of the brioche bun by folding the outside over several times. I lightly smeared mayonnaise on the brioche and put the eggs on top, added pepper. He said it was so much better than regular white bread (which is my favorite way to eat an egg sandwich) so whatever makes him happy, I am sticking with my plain ole cheap white bread (untoasted) for my eggsammies...sorry I didn't take a photo but MrOH was impatient to eat and my phone was in the bedroom.
Unless I have a Tasty McMuffin. I do like toasted English muffins with eggs and Canadian bacon every so often. I need to do that sometime soon.
