Ummmm, did I just read that right? So, the other food forum has recipes that are of better quality?

Phew! I think there were 33 recipes in all. A veritable cornucopia of corn! I've tried to make comments in all the recipe threads. I think I said before that in the UK we don't have a tradition of using corn very much. Its usually served plain as a side or grilled on the cob. So, it was fascinating to see and learn all these new ways to use it. I even learned about 'milking' corn!

There were plenty of excellent 'comfort food' recipes here. Some notable ones were Pork And Hominy Stew and Skillet Tamale Pie from TastyReuben, Souprême Chicken and Mushroom from Yorky, Beef Stew from The Late Night Gourmet, Keen's Curried Cream Corn from murphyscreek and Taco Soup with Corn from TodayInTheKitchen.

After much deliberation I've compiled a long list of top runners:

• Corn Soufflé from TastyReuben. Its such a pretty dish with a lovely hint of chilli.
• Triple-Berry Upside-Down Cornbread from TastyReuben. As I said, it looks 'double luscious'. This recipe has a bright future I think!
• Bulalo from murphyscreek. Beef bone marrow with corn in this Filipino dish really changed my ideas of ways to serve corn.
• Cuban Chicken and Corn Pie from medtran49. I loved the combination of combination of spices with olives and capers. Another game changer for me.
• Frito Pie with West Texas Chili from medtran49. Frito pie was new to me and the West Texan chilli, laced with beer sounds delicious.
• Mexican steak chilli from Windigo. The use of fillet steak made this a gourmet dish.
• Soft Corn Tacos with Grilled Corn and Seafood from JASOH1. A great use of colour, texture and flavour here and of course, my favourite seafood.
• Golden Masa Seafood Crepes with PEI Mussels and Lemon Butter Corn Crema from JASOH1. This is a vibrant looking dish which ingeniously uses corn in several different ways. The roasted garlic in the 'Crema' is a lovely idea.
• Chicken and Corn Maque Choux Enchiladas from ElizabethB. I thought the combination of ingredients was intriguing, in particular the use of the Maque Choux in a Mornay sauce.

Now I go away to try to decide on the winner...

It doesn't matter if you choose an ingredient we have previously had as long as its not too recent. Its best to choose an ingredient which is fairly accessible in our different countries.

I love basil Mine hasn't come up yet (although I planted the seeds). It did well last year so I can only hope! If not, I'll find some - great choice.
