Weekly Menu (2025)

I find corn tortillas have to be really fresh to not break. Often I'd heat in the microwave with wet paper towels between them before use.
That’s a good idea, the reason I bought corn tortillas is because it has no cholesterol. But next time I won’t throw the rest away because after baking they taste quite good, I could make corn chips.
 
My extra container of sour cream is being used, my kids use them in spread with smoked salmon, they said it taste good. I never thought about this combination, it usually cream cheese and salmon. So that’s what I’m going to do tomorrow with my dill.
 
I had a disappointing potato dish yesterday, I was expecting crispy potato, it didn’t turn out that way. So I’m thinking of turning all the leftover potato into sausage, kale, potato soup. I have sausage, potato, but no kale, I do have baby kale in the garden. When my daughter goes for a walk, I will ask her to buy a bunch.

I also have a big bag of shrimp, I only used some of the shrimp for the Shrimp, avocado, mango timbale. So I’m going to make shrimp pasta with sun dried tomato, I have a jar of sun dried tomato from my garden this year.

My leftover of mascarpone cheese will be turning into a tiramisu for New Year’s Eve, I will make a small batch. I have some leftover lady fingers, just bought not to long ago, I hope it’s not outdated yet.

I also have a freezer worth of leftovers, I don’t think I need to buy a lot in the next few weeks.

Potato Dauphinoise or au gratin.
Yep. Actually saw that.
Au gratin is not normally crispy.
You coud try rösti or shallow or oven fried.
Or cook, mash and make potato croquettes or burger shaped (it got a proper name that I can't remember).
Or go wild and spanish tortilla (very morish, but not crispy though)

From instagram they look so good, they look crispy so I thought I give the recipe a try.
