Took my 9 lbs. of watermelon and processed the rind to turn it into chutney. Peeled the outer green part off and cut it into bite sized pieces. Then came a lot of boiling to soften it up; couple of hours. Then I added cinnamon, sugar, 1 whole bulb of homegrown garlic, ACV, ground cloves, onion, shishito, cayenne, guajillo chilies, diced tomatoes, and some salt and cooked it down thick. Jarred it and pressure canned 6 lbs. @ 10 minutes. 😋
