I have garnished with grated, salted, dried egg yolk. We've used pancetta, but it's so much better with guanciale when you can get it. Guanciale is available now at the local Italian market, but years ago I had ordered some jowl fat from a specialty butcher at a huge farmer's market to cure my own, but, after we bought it and were leaving, saw an Italian restaurant supply place and bought a huge piece of guanciale. Ended up using the jowl fat for Austrian speck, which I then used for

Did you add pasta water to your sauce? That helps loosen the sauce and makes it more creamy.
I like that idea! And yep, I added 1/2 cup of pasta water, or as it's been called, "tears of the Roman Gods". That Kasepaetzle looks very good, too.

I never see guanciale at my grocery store, they have a section for meats and cheeses that are more "uncommon" and I never see it there. I just use a good quality, thick cut, smokey bacon.

A lousy chicken sandwich at a Baltimore Ravens game today. I'm actually not a football fan in the least, but a cousin of mine plays in the team's band and bought his whole extended family tickets to awesome seats right above the band and practically on the field. Our team lost, but it was an experience, a great time with the family, and it was awesome to see him play on the field.
