Hariyali Chicken cooked yesterday, but as usual made plenty so there's leftovers for the next day (today). This is an Indian version of a green curry.

I made my family's favorite for lunch -- shrimp in a diced tomato and onion sauce seasoned with garlic, basil and black pepper. Once again, I didn't think to take a picture. Every time I go to Houston they want me to make it.

My sister and I went for fajitas and a margarita for dinner after spending a day with my parents that had both on the edge of sanity. My sister asked if it was okay for my liver for me to have a drink, and I said, "Not really, but at least my head won't explode."

Last nights dinner. Leftover swordfish and potato thai style yellow curry. It was the dogs. The fish retained it's taste and texture. I have one raw steak left in the freezer, it is now earmarked for this. Pud was watermelon

King Ranch chicken is named after the King Ranch, the world's largest ranch -- in Texas, of course. It is a spicy casserole with chicken and corn tortillas. I've never made it. Here is a recipe from Southern Living Magazine...

A version of picadillo. Ground beef and pork(that is how it is sold, that is why it keeps popping up, very good meat mixture. Large 850 g block pack. Have no clue why not 500 g or 1000 g. Does not matter. We eat it usually over 3 days).

Coriander, cinammon, raisins over onion, celery, plentiful carrots, salt, pepper.

I really like the warm soft sweet aromas, kid was not thrilled when serving, but eventually was happy with it.

Leftover rice. Very nice lunch.

Had a lemonade along.

Will be rechecking my iron level next week.

I remember the first time I grilled tuna steaks in my twenties. It was for me and my girlfriend at the time. We ate a few bites... then went to a restaurant for dinner. Overcooked tuna could be classified as a weapon.

But it's salvageable. You can add mayo and liquid smoke with chopped green onion and make a dip for crackers. Or noodles and cream of mushroom soup for tuna casserole.
