Can you tell us about the naan cooked three different ways?Minced meat empanada, fresh orange juice, samosa, prok vindaloo , coconut milk sauce for shrimp, naans (cooked 3 different ways), raw lentil paste for vadas, 1 chile de arbol, 1 green Peruvian pepper and a cracker with some papaya marmalade.

The chef/owner of the restaurant is also an expert baker, so he knows all the technical stuff .He had a naan recipe which he made and cooked on a griddle. I wasn't really impressed; it was too dense ( bit like me at times). I said to him - let's try it in the oven. We did - still not what I think a naan should taste like. Then I gave him my recipe, which has nigella/kalonji seeds in it. Worked on the griddle, and was very good in the oven.I was still not 100% happy, because I wanted the smooth texture of the naan and the slightly crispy, bubbly outer casing resulting from the tandoor. Well, no tandoor, so no luck. Still, the griddled naan, with my recipe, won the day. It was a fascinating process.
Strictly speaking, it was naan 4 ways!
