Can you tell us about the naan cooked three different ways?

I had lamb bones in the crockpot that I deboned and removed yesterday, then added the red wine, garlic, onion, mushrooms, and tomato sauce. This morning I sauteed the beef, pork, and lamb and added that along with dried herbs. It simmered all day. I added a cube of frozen pesto about 30 minutes ago. I'll give it a taste test shortly and add whatever it might be missing. Should be ready for DH's dinner around 11 but I'm not sure I'll be hungry.

Yep.
The chef/owner of the restaurant is also an expert baker, so he knows all the technical stuff .He had a naan recipe which he made and cooked on a griddle. I wasn't really impressed; it was too dense ( bit like me at times). I said to him - let's try it in the oven. We did - still not what I think a naan should taste like. Then I gave him my recipe, which has nigella/kalonji seeds in it. Worked on the griddle, and was very good in the oven.I was still not 100% happy, because I wanted the smooth texture of the naan and the slightly crispy, bubbly outer casing resulting from the tandoor. Well, no tandoor, so no luck. Still, the griddled naan, with my recipe, won the day. It was a fascinating process.
Strictly speaking, it was naan 4 ways!
