He called the small purple things apple eggplant, but I've only been able to Google apple green eggplant.

Probably but the chemical balance of bitterness, sweetness with ripeness alters every day.I think they're bitter all the time but it's part of the flavor profile to me. Some people have all kinds of steps to remediate that; I just cook it and eat it. (Right along with the trotters...)
