Black Mussel Wine Soup:
Ingredients:
1) Mussels, black - 1/2 cup
2) Broccoli, crowns - 1/2 Cup
3) Scallions - 1/8 Cup
4) Garlic - 4 to 5 tspns.
5) Butter - 1 tblspn.
6) Olive Oil - 1 tblspn.
7) Wine, Gewurztraminer or Riesling - 1 cup
8) Cheese, cream - 1 tblspn.
9) Spice Islands mash - 1/8 cup or as desired
Procedure:
1) If the mussels are shelled, cook and remove the shells.
2) Blend cream cheese, broccoli, olive oil and butter.
3) Add mussels, scallions and whole garlic in pot with blend and wine.
4) Add spice island mash and cook for 10 to 15 minutes at medium heat.
5) Serve.
