Cauliflower Rice with Smoked Almonds

INGREDIENTS
1/2 Head of Cauliflower - grated
1 Green Bell Pepper or equal portions of assorted colors - cored and diced
6 Scallions, whites and greens - sliced
1 clove Garlic - minced
1/2 Jalapeno - cored and minced
Chopped, fresh Parsley
1 TBSP Butter
1 Tsp. EVOO
1 cup Smoked, Salted Almonds - chopped (I use Blue Diamond Smokehouse Almonds)
Sea Salt
Fresh ground black pepper


METHOD
. Wrap grated Cauliflower in a towel and SQUEEZE to remove excess moisture
. In a heavy skillet or sauté pan heat EVOO and butter until butter foam subsides
. Add first 5 ingredients to pan. Stir frequently and cook until liquid has evaporated and cauliflower is tan or lightly golden.
. Toss in Almonds, stir to combine
. Add salt and pepper to taste
. Finish with Parsley.
