Recipe Chicken Alfredo Pasta with Greek Yogurt

Ingredients

2 tbsp salted butter
3 minced garlic cloves
1/2 cup milk. I used 1% milk
1 cups of plain greek yogurt, nonfat
1 cup shredded parmesan cheese
8 oz pasta
Chicken (I used leftover roasted chicken)
white button mushrooms
Teaspoon of Italian Seasoning
Salt, to taste
Black pepper, to taste
Fresh parsley, for garnish

Process:

Melt butter in a sauce pan over low heat. Add garlic and Italian seasoning

Turn to simmer, add in milk, yogurt, salt and pepper. Whisk until it is a smooth texture. It happens pretty quickly.

Add the Parmesan cheese and whisk/stir until it is a smooth texture. If it is to thick, add more cream and/or yogurt.

Once it is done, add pasta, chicken, and sauteed mushrooms (I sauteed separately)

Very good! I would prefer this to a traditional cream sauce. I was anticipating you using something to stabilise the yoghurt as its apt to split when heated. Did this happen? I can't tell from the photo.
 
Must be quite a flavorful dish and you could omit the chicken if you want to go vegetarian. Love the addition of mushrooms and good idea to saute separately so their liquid doesn't muddy or dilute sauce.
