Recipe Pistachio-Flavored Meatballs

Pistachio-Flavored Meatballs

Serves 4-5 | Preparation & cooking time ~45 min

I had pistachios left from the challenge; I added some into meatballs.

Ingredients
600 g (~21 oz) minced meat/poultry (I used turkey and lamb)​
1 yellow/brown onion​
6 cloves of garlic​
100 ml double/heavy cream​
50 ml strong coffee​
50 g (~95 ml/0.4 US cups) shelled, unsalted pistachios​
2-3 tablespoons breadcrumbs​
1.5 teaspoons salt​
1.5 teaspoons dried mint​
0.5 teaspoon black pepper​
0.25 teaspoon white pepper​
1 egg​

Instructions

Set the oven to 200°C (~390°F/gas mark 6, no fan). Grind the pistachios into coarse powder in a blender/mixer with the onion, garlic and coffee. Mix all ingredients and put small lumps with two spoons (or by hand) on top of parchment paper on a baking tray. Cook in the oven for 25-30 minutes until done and slightly browned.

Edit: I added the onion I forgot to mention earlier.

Nice. Hemulen, if you'd gotten this in before the challenge closed, I would have had 9 runner ups to choose from.
