Roasted Baby Potatoes

Ingredients:

1 lb. Baby Potatoes, scrubbed clean & dried (any Potato will do)
1-2 Tbsp. Olive Oil (or the oil of your choice)
1 tsp. Garlic Powder
Salt & Pepper to taste

Method:

Preheat the oven to 425°F/219°C
Line a rimmed baking sheet with tin foil
Cut the Potatoes into halves or quarters, depending on their size
In an appropriately sized bowl, toss the Potatoes with the remaining ingredients
Dump out the bowl's content onto the sheet pan and arrange the Potato pieces cut side down
Bake/Roast for 15 minutes
Turn all of the pieces over and Bake/Roast for an additional 10-15 minutes, depending on the size, until fork tender

Serve warm

*Cook's Note: use whatever Potato you like, these are Baby Red Bliss - add any herbs/spices you like, this is how my household likes them.
