Salad on Skewers with Bagel Wedges:
Ingredients:
1) Lettuce, Romaine - 1 leaf
2) Mushrooms, crimini brown - 2
3) Cucumber - 4 slices
4) Tomato, Roma - 1
5) Onion, pearl - 4
6) Zucchini, yellow - 2 slices
7) Pepper, bell, green - 1/2 medium
8) Bagel - 1/2
9) Cheese, Swiss - 4 cubes
10) Cheese, Cheddar - 4 cubes
11) Lime juice - 2 tblspns.
12) Olive oil - 2 tblspns.
13) Vanilla yogurt - 2 tblspns.
Procedure:
NOTE: Use wooden skewers, about 12 to 14" long.
1) Cut the lettuce into approximately 1" pieces.
2) Halve the mushrooms.
3) Slice the cucumber and zucchini into 4 slices.
4) Quarter the tomato.
5) Remove the roots and tips from the pearl onion and skin.
6) Cut the bagel into approximately 4 pieces.
7) Slice the cheese into approximately 1" cubes.
8) Mix the lime juice, olive oil and yogurt to create a dressing.
9) Skewer the ingredients in a preferable order.
10) Lay the skewered salads on a serving plate.
11) Drizzle on the dressing, as desired.
NOTE: It may be preferable to drizzle on the dressing as the skewered salad is consumed, to prevent it from dripping outside of the dish onto the table.
12) Serve.
