Salmon Scallop Snow Pea Soup:
Ingredients:
1) Salmon - 2" wide cut from thickest part of a fillet
2) Scallops - 8 to 10 large
3) Snow Peas - 10 to 12
4) Garlic cloves - 8
5) Scallion - 1
6) Half n half - 2 to 3 tblspns.
7) Butter - 1 tblspn.
8) Wine, Albariño - 1 cup
9) Oregano - 2 tspns.
10) Mustard seed, yellow - 1 tspn.
11) Grated Parmesan cheese - as required
Procedure:
1) Julienne cut the snow peas lengthwise into thin strips.
2) Cross cut the scallions.
3) Skin the garlic as necessary, if not already pealed.
4) Add wine, half n half and butter to a stewing pot.
5) Heat the wine and half n half.
6) Add salmon and scallops.
7) Heat and flake the salmon.
8) Add snow peas, garlc, scallions and spices.
9) Simmer until snow peas, garlic and scallions soften.
10) Ladle into soup bowl(s).
11) Sprinkle on grated cheese.
12) Serve.
