Oysters I adore! I've never tried them deep fried only fresh.

we did a 'instructional dinner' at the fish monger about a week back - they had oysters from all up and down the eastern US seaboard for 'tasting demo' - except for one dish, all on-the-half-shell.

amazing the difference in flavor from Canada/PEI "cold" waters to the warmer tidewater regions....
the colder water oysters are 'sweet(er)' i.e. not 'briny' like their southern counterparts - and also interesting.... being 'farmed' it's the same species oyster 'seedlings' - raised in difference environments.
