Recipe White witch dressing (v.1)

It looks so pure and innocent but has such a mischievous side! I've been working on the concept of this dressing for a while. Here is version 1.

Its essential to let this dressing rest for at least a couple of hours (or overnight) so that the raw ingredients calm down a little and get to know each other. Its great with seafood, potatoes, beetroot and well, many things. You need a medium microplane to make this (or a very expensive super blender).

Ingredients (makes approx. ¼ pint/ 145ml)
4 spring onions (scallions), white part only
2 white radishes (you could use red but will get flecks of red in the dressing)
1 medium clove of garlic
1 small thumb of ginger, peeled
¼ tsp white pepper
4 tbsp double cream (heavy cream)
3 tbsp Greek style yoghurt
1 tsp Dijon mustard
Juice of half a lemon
1 tsp sugar or honey
Salt to taste

Method
  1. Grate the first 4 ingredients into a bowl/jug using a medium microplane.
  2. Add the remaining ingredients and whisk everything together. I used a stick blender.
  3. Add salt to taste. Cover and leave for at least 3 hours or overnight.

I think I’d struggle to get white radishes.
Do you think Mooli would work or stick with red and call it bloodied white witch dressing? 😂

I'm sure mooli would work. And red radishes would only give a few flecks of red - might look pretty. I got the white radishes from Morrisons (mixed radishes).

Ah I looked at Ocado. I don’t think I’ve ever got white radishes when Ive bought their mixed bag 🤔
Yes it might be quite pretty to see flecked red in there.
 
Tasted it again today after more than 24hrs. It definitely needs time to mellow. It was much less fierce.

I'd say this wouldn't be to everyone's taste. If you don't like horseradish you probably won't like this dressing. Not that its got any horseradish in it but somehow the ginger and radish conspire...

I'll be trying it with some prawns tomorrow.

I do see what you mean but not sure. It would make it too 'nutty' I think? I'm aiming at a zippy, sparky 'oh' taste. I mean, its meant to be a bit tricksy. Its a witch after all!

I'd be very happy to get feedback good or bad, should anyone make it.
 
I'm getting nervous about this. I keep tasting it and getting different impressions. One time it's interesting with a kick and the next time its far too harsh. Usually I can judge tastes really well, but this dressing is capricious!

Well you said clearly at the start it was the 1st iteration and I like the ingredients so I’m sure you’re onto something.
Maybe just some tweaks on take two?!
