Cheese is a dairy product, derived from the milk. Rennet is added causing casein to coagulate and the solids collected to be pressed into the finished cheese
Cheese is a dairy product, derived from milk and produced in wide ranges of flavors, textures and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. During production, the milk is usually acidified and the enzymes of either rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout. Over a thousand types of cheese exist. Their styles, textures and flavours depend on the origin of the milk (including the animal's diet), whether they have been pasteurised, the butterfat content, the bacteria and mold, the processing, and how long they have been aged for. Vegetarian alternatives to rennet are available; most are produced by fermentation of the fungus Mucor miehei, but others have been extracted from various species of the Cynara thistle family.

    Favorite smoked cheese

Smoked gouda used to be my favorite smoked cheese, but I discovered smoke Gruyere the other day and now that is my favorite. I cut it up into slices and then wrapped it in ham slices and it was the best snack ever. What is your favorite smoked cheese?

    Parmesan Cheese

Last year a supplier gave a big block of parmesan cheese to the materials manager who put it in the Company raffle. The guy who won it sold it for £10.00 and pocketed the money much to the annoyance of a few people who felt he should have given it back to add to the collection for the chosen...

Recipe Cheese on egg on ham on toast

A really basic recipe! The trick here is to fry the egg until the yolk is just done, so that when its grilled (broiled in US) the yolk stays runny under the melted cheese. When you cut into it, the yolk should burst delightfully and ooze onto the plate. I really should have photographed that...

    Fancy grilled cheeses

I love a good old grilled cheese sandwich - to me it's just one of those comfort foods that you can't really go wrong with. When I was younger, I would always have them just plain - cheese, bread, butter - but as an adult I like to "fancy" up my grilled cheeses. Lately my go to has been pesto...

Anybody have a good recipe for a Cheese Ball?

With Christmas not so far off I am trying to get together some ideas for appetizers for our Christmas get together. I usually have cheese balls and crackers but I have never made one before. I always buy them. I have had ones that people made at other parties I attended and they were quite good.

    Least Favorite Cheeses

I'm not a bg fan of cheeses that are made to be spicy. There was a time that I liked putting pepper jack variety cheese on the things I eat. Well, those days have since passed and now I find myself really disliking pepper jack cheese. What is your least favorite cheese to eat?

    Beer cheese
