Spice Islands Seafood Plate:

NOTE: The Spice Islands coulis will impart a warm flavor to the meats while the mash will add a sweet and spicy flavor.

Ingredients:

1) Scallops - 2
2) Prawns - 3
3) Black mussels - 3 to 5
4) Salmon fillet - 2" wide cut
5) Sushinori - 2 sheets
6) Spice Islands Mash/Coulis - as required
7) Wine, Wine, Gewurztraminer or Riesling - 1/8 cup


Procedure:

1) Remove shell from prawns.
2) If mussels are in shells, cook and remove the shells.
3) Cook salmon, scallops, prawns and mussels in wine and mash.
4) Cut 1 sushinori sheet in half diagonally and wet slightly in middle.
5) Arrange the salmon, scallops, prawns and mussels on a serving plate.

NOTE: Arrange the food elements to form an artistic presentation.

6) Lay the uncut sushinori sheet in one corner of the plate.
7) Curve and stand sushinori halves in one corner of the plate to appear like mountains or hills in the background.
8) Drop bits of mash on the meats.
9) Drizzle spice coulis artistically on the meats and plate.
10) Serve.
 
Looks amazing.

It tasted great. What peeves me is that my hands shake a lot at my age and I just can't steady them enough to get the art of the meal as I imagined it. Oh well.
