The diced mushrooms work well as a replacement for minced pork so as a bonus, it's vegetarian friendly.

Has anyone used corn mushrooms (huitlacoche) also known as corn smut in a recipe? I have a jar which has come all the way from Mexico. Maybe now is the moment to use it.

I quite like the challenge of nasty looking. I can't really see the ones in my jar properly but they don't look 'pretty pretty'.

We ordered frozen ones several years ago and weren't impressed with the first dish we made with them. The rest of them remained in the freezer slowly drifting toward the bottom until we emptied it out for our last move and they got tossed.
