We had roast pork last Sunday.

We eat roast pork fairly often. I’ve done cooked “ssam” style in the freezer that are destined for banh mi.

I would love to try making this. Alas, the chances of me acquiring pork brains in the next three weeks are rather minimal. (I have had pork heads in my freezer, but none are there at the moment.) I know if I drive down to Amish Country in Pennsylvania I can get some of these, but that's a 5 or so hour drive just the one way.

Went to the supermarket today. I ended up with a package of pork chops (5 or 6), all thick cut, bone-in, two styles in the package, and only $2 a pound!!! So.... I have to figure out what to do with them!!!

I’m sitting in a hotel in Ephrata, PA right now, Amish farms start about 100 feet past the town limit sign…you want me to overnight you some?

I think it’s just stuffed with bread stuffing/dressing, maybe with a little ground pork in it.
