Don't know who Kenji is...

J Kenji López-Alt, often known simply as Kenji, is an American chef and food writer. He is kind of like Alton Brown, in that he has a somewhat science/art approach to cooking. but leaning more to the art side than Brown. He has a book out called The Food Lab, Better Home Cooking Through Science.

My husbands birthday is friday and because we have no time next weekend his birthday dinner out was tonight. He wanted to go to our friends Italian place.
