allspice
Allspice, also known as Jamaica pepper, myrtle pepper, or pimento, is the dried unripe berry of Pimenta dioica tree.
Allspice, also known as Jamaica pepper, myrtle pepper, pimenta, or pimento, is the dried unripe berry of Pimenta dioica, a midcanopy tree native to the Greater Antilles, southern Mexico, and Central America, now cultivated in many warm parts of the world. The name "allspice" was coined as early as 1621 by the English, who valued it as a spice that combined the flavours of cinnamon, nutmeg, and clove.
0.5 tsp of Allspice with 0.25 tsp of cinnamon is good. I wasn't so keen on cardamom or cumin, but may try black pepper.
Would you leave the cloves as they are or grind them? At what point would I add them to the recipe?
I have some mace leaves which don't grind well. When should I add them?

I usually cook black beans in a spicy Mexican style sauce but wanted to try something different. Slow cooked beef in brown ale is a traditional British way to cook beef and here and I set about trying to re-create something of that deep and dark savoury taste in a vegan bean dish. Juniper and...

There are some interesting things about making your own mustard:
it will be spicier than the kind you buy at a store
it will also be more bitter.
The reason for both of those things is because cracking open a mustard seed releases something intensely flavorful. While I have seen some mustard...
So, this mustard spice challenge....
I just had to make some of my own for a change. I have loads of different mustards in and around the place, from yellow mustard seeds to black/brown mustard seeds, to wholegrain mustard, to Coleman's mustard powder to Swedish mustard and back to French...
Fot the allspice challenge here is my Mum's banana cake which I remember eating as a child. I haven't yet cooked it myself but I intend to. Her measurements are in imperial measures, sorry.
3oz butter or margarine
4oz brown sugar
1 egg, beaten
2 large bananas mashed
8oz self-raising flour
1 tsp...
This is my attempt at replicating a recipe from a now defunct restaurant in NYC, Jimmy Armstrong's Saloon. Jimmy was a merchant seaman who collected recipes from his travels up and down the Atlantic coast.
Jimmy has passed now, but this is is as close as I've been able to come to reproduce his...
Another of my time old recipes, undated but back to the last centaury...
I love this one because it uses nettles, but if you don't have any nettles around, then spinach and sorrel leaves will also work, as would any other fresh greens. But Spring is the time of year to pick nettles...
My entry for the allspice challenge. This is a recipe from Waitrose website which I had saved. I made it a little while ago but used fresh tiger prawns not frozen. It makes a good starter for a dinner party.

Another recipe which uses allspice. Pontack is a very old English recipe for a savoury sauce (some say its a little like Worcestershire sauce). It very 'in season' here as it is made from Elderberries. It keeps for years (apparently). Its served mainly with game. But I can't see why it wouldn't...
Another recipe developed in my quest to use allspice more often! I was very pleased by this one, as the combination of allspice and cinnamon is quite magical. I made this to serve with veggie burgers. But it would also go well with game pate for a starter. This recipe is for a small quantity of...
