I wanted to find a way of using lentils in a dessert (crazy, I know) and I found this recipe online which I am keen to try. Not only does it use lentils in a sweet context but it's also vegan and gluten free.

This is one of my creations that has not only worked out really well but is also surprisingly low calorie, packed with protein and quite substantial. It will serve 6-8 without rice quite generously, so you may need to adjust the quantities and you are going to need a large pan!

One of my NY resolutions needs to be to use up things I have in my pantry, rather than just letting them hide out in the dark depths of it, never to be used...
