vegan

Veganism is the practice of abstaining from the use of any product created by or obtained from any living creature.
Veganism is the practice of abstaining from the use of animal products, particularly in diet, and an associated philosophy that rejects the commodity status of animals. A follower of the diet or the philosophy is known as a vegan. Distinctions may be made between several categories of veganism. Dietary vegans refrain from consuming animal products, not only meat but also eggs, dairy products and other animal-derived substances. The term ethical vegan is often applied to those who not only follow a vegan diet but extend the philosophy into other areas of their lives, and oppose the use of animals for any purpose. Another term is environmental veganism, which refers to the avoidance of animal products on the premise that the industrial farming of animals is environmentally damaging and unsustainable. Interest in veganism increased in the 2010s, especially in the latter half. More vegan stores opened and vegan options became increasingly available in supermarkets and restaurants in many countries.

Recipe Tangerine Tofu with Star Anise

Marinating tofu for a long time pays off here - the orange and anise flavours really shine through. You could substitute another green vegetable instead of the sugar snap peas. Asparagus or green beans would work. Serve over noodles or rice for a light lunch. Ingredients (serves 2) 250g firm...

Recipe Brinjal Bhaji with Green and White Aubergines

This is a very simple curry to make once you have made the Balti Spice Mix. You could make this with purple aubergines in which case the cooking time will be shorter. White and Thai green aubergine are more robust than the purple variety and do not disintegrate so easily. The skin on the Thai...

    Recipe Christmas Mince Pies (Vegan)

Mincemeat isn't a 'set' recipe. Its basically dried fruits steeped in alcohol (or fruit juice) with suet and often grated apple added. Its simple enough to make it vegan by using vegetable suet which is easily available in the UK. Indeed most jars of ready-made mincemeat seem to be vegan these...

    Recipe Imam Bayildi (Stuffed Aubergines)

Although this is normally regarded as a Turkish dish, it is eaten in Greece too, as well as being thought to be a Moorish dish originally. There are many versions of the same story as to how the dish got its name. Once there was a famous Turkish Imam who was particularly fond of aubergine...

Recipe Tipsy Tarragon Tofu and Mushrooms

Tarragon has a delicious aniseed taste which works well with delicate tofu and earthy mushrooms. The splash of Pernod in the marinade will tweak up the aniseed flavour.
