vegetarian

Vegetarianism is the practice of abstaining from the consumption of meat (red meat, poultry, seafood, and the flesh of any other animal), and may also include abstention from by-products of animals processed for food.Vegetarianism may be adopted for various reasons. Many people object to eating meat out of respect for sentient life. Such ethical motivations have been codified under various religious beliefs, as well as animal rights advocacy. Other motivations for vegetarianism are health-related, political, environmental, cultural, aesthetic, economic, or personal preference. There are variations of the diet as well: an ovo-lacto vegetarian diet includes both eggs and dairy products, an ovo-vegetarian diet includes eggs but not dairy products, and a lacto-vegetarian diet includes dairy products but not eggs. A strict vegetarian diet – referred to as vegan – excludes all animal products, including eggs and dairy. Avoidance of animal products may require dietary supplements to prevent deficiencies such as vitamin B12 deficiency, which leads to pernicious anemia.Packaged and processed foods, such as cakes, cookies, candies, chocolate, yogurt, and marshmallows, often contain unfamiliar animal ingredients, and so may be a special concern for vegetarians due to the likelihood of such additives. Feelings among vegetarians may vary concerning these ingredients. Some vegetarians scrutinize product labels for animal-derived ingredients while others do not object to consuming cheese made with animal-derived rennet. Some vegetarians are unaware of animal-derived rennet being used in the production of cheese.Semi-vegetarian diets consist largely of vegetarian foods but may include fish or poultry, or sometimes other meats, on an infrequent basis. Those with diets containing fish or poultry may define meat only as mammalian flesh and may identify with vegetarianism. A pescetarian diet has been described as "fish but no other meat". The common-use association between such diets and vegetarianism has led vegetarian groups such as the Vegetarian Society to state that diets containing these ingredients are not vegetarian, because fish and birds are also animals.

Recipe Open Raviolo with Mushrooms (Raviolo Aperto con Funghi)

Sadly, Antonio Carluccio died unexpectedly at the end of 2017. He was a great character with an absolute passion for Italian food and Italian produce. One of my very favourite cooking shows is Two Greedy Italians. Its very amusing, thoughtful and at times, moving. Worth watching of you get the...

    Going Vegetarian this September

Basically as a mental cleanse (the liver does the biological cleanses just fine, thank you). So anyhow I plan to eat vegetarian (with two provisos) that month. If I'm invited to dine at someone's house, I'll eat what I am served. After all, I'm not "really" a vegetarian, and I don't need...

Recipe Basmati Rice Seasoned with Cumin Seed, Fenugreek, Curry Leaf

The recipe: (Vegetarian or vegan), see below. My best luck in making rice is by using my Japanese rice cooker, so that’s what I’m going to do. (Burnt too much rice to the bottom of pans back in the day… not going back there, and Basmati rice cooks well in one of these cookers…) The cumin is...

    Recipe Vegan (Red) Cheddar Cheeze

This is a bit of an experiment. Whatever the outcome, it is very tasty and hot out of the saucepan would make for an excellent melted red cheddar. The question that remains to be seen is how hard it sets and if it will melt again afterwards. Assuming there's any left, I'll let you know. Now...

    Recipe Vegetarian Welsh Rarebit

Welsh Rarebit is totally delicious and there are many variations of this classic ‘savoury’. But, to my mind, it has to feature strong cheddar, strong mustard and strong beer. Here, I’ve made it vegetarian by substituting soy sauce for Worcestershire sauce (which is made with anchovies). The...

    Recipe Tarka Dahl Soup

This is lovely comforting dish. It takes some inspiration from French onion soup which classically uses beef stock and indeed, you could use a light beef stock instead of the miso & Marmite. I just wanted to keep it vegan. The tarka with nutty toasted mustard seeds and fragrant curry leaves adds...

Recipe Spicy Aubergine Involtini with Chana Dal & Spinach

This vegan dish makes a good light lunch with some crusty bread on the side. The flavours are intriguing and contrasting, using earthy Indian spices with miso and sweet & sour pomegranate molasses. Use more chilli if you want a spicier tomato sauce. Ingredients (makes 5 to 6 involtini) For...

Recipe Asparagus with Truffle Oil and Black Bean Aquafaba Miso Mayonnaise

This mayonnaise is vegan and made from bean water (aquafaba) - the liquid from tinned beans. I used black bean aquafaba which gives the mayonnaise a pinkish mauve colour which I rather like (for a white mayonnaise you can use chick pea water). The white miso adds a savoury tang to the mayonnaise...

Recipe Asparagus with Egg Fried in Brown Butter & Miso Tarragon Foam

Making foams is great fun and much easier than some other ‘modernist cooking’ techniques. You will need lecithin powder and a stick blender. I managed to find some white miso which was nearly white in colour (a lot are more yellow or browny beige than white). The brown butter adds a nutty...

Recipe Potato Salad with Sun-dried Tomato, Olives and Parsley

A virtually fat-free potato salad using yoghurt rather than mayo. The sun-dried tomatoes add a kick of tangy flavour, the olives add saltiness and the parsley brightens and freshens the flavour. This salad is best made when the potatoes are still warm. Ingredients (serves 1 to 2) 120g boiled...

Recipe Red Onion Tart with Parsley and Parmesan

Caramelised onions have a wonderful sweet flavour which works well with the slightly fruity and nutty taste of a good Parmesan. The parsley adds a mild bitter and mineral note which brightens the flavour. This makes a great simple vegetarian lunch together with a green salad. To make it vegan...
